Cornbread Salad

2 (6 ounce) packages cornbread mix, cooked and crumbled
Crisp bacon, crumbled
1 large bell pepper, chopped

1 large onion or green onions
2 stalks celery, chopped
4 hard boiled eggs
3/4 to 1 cup Miracle Whip or Mayonnaise
|
Prepare cornbread according to package directions. Cool and crumble in a large bowl. Fry bacon until crisp,
drain. Crumble bacon into cornbread. Chop bell pepper, onion and celery. Add to Cornbread mixture. Chop
hard boiled eggs and add. Add enough Miracle Whip or Mayonnaise to mixture until desired salad consistancy.
