Celery Supreme Casserole

5 C chopped celery
1/2 C margarine
2 T. chopped onion
1/4 C. flour
2 C. milk

1 tsp. salt
1/8 tsp. pepper
1/2 C. heavy cream
3/4 C. chopped pecans
1/3 C. stuffing mix crumbs

Melt one-half of the margarine (1/4 c) in top of double boiler. Mix onion
and flour in melted margarine and cook until thick like gravy. Remove from heat. Add milk, salt and pepper.
Cook until thick, about 15 minutes. Meanwhile, cook celery in covered pan of salted water for 15 minutes.
Drain well and place celery in bottom of buttered 1 1/2 quart casserole dish. Stir cream into the white
sauce and pour over celery. Melt the other half of margarine (1/4 c), add crumbs and chopped pecans. Sprinkle
on top of celery and white sauce mixture. Bake, uncovered, 15 minutes at 375 degrees and prepare to enjoy
a deliciously different casserole. Serves 8.
