Cranberry & Apricot Wild Rice

1 1/3 c. wild rice
4 c. chicken broth
3/4 c. dried cranberries
3/4 c. dried apricots, diced
4 scallions, sliced
peel of one orange, grated
3/4 c. orange juice
1/4 olive oil
2 tlb. rosemary
1 tsp. salt
1/2 tsp. pepper
In saucepan, bring rice and broth to a boil; reduce heat to low, cover and simmer 50 minutes; drain rice. Add cranberries, apricots, scallions, orange peel, orange juice, olive oil, rosemary, salt and pepper. Mix and serve chilled.
